Have you savored the seasonal joy of an autumn harvest as a family yet this year?
Here in the Pacific Northwest, fruit trees abound. Festivals at orchards or plant nurseries frequently offer an opportunity for families to experience fresh-pressed cider, taste an assortment of apple or pear varieties, and sometimes even U-pick, along with boxes of fruit to take home!
We have apple trees outside our home, and it is a simple blessing of autumn's arrival. The whole family loves to help harvest the apples! Daddy can climb up the ladder to reach the higher branches and then hand down the apples for an "assembly line," as the children place the fruit into buckets. (We always have plenty of taste-testers, too!)
We also recently picked our first grape harvest. These tart-sweet green grapes were a perfect treat on a Sunday afternoon, alongside a tray of finger foods shared with friends. (My mama always says that the grape leaves are perfect in her jars of home-canned crispy dill pickles, too!)
For a simple autumn breakfast or dessert, we enjoy serving up bowls of an apple crumble on chilly mornings for our family and guests at our inn. You can make it in a large casserole baking dish, or small individual serving ramekins like we do. It is much quicker than baking a pie, but offers that similar spicy-sweet seasonal flavor.
1 medium apple
1 Tbl. organic raw sugar
1 tsp. real vanilla extract
1 small splash apple cider (optional)
1 cup rolled oats
1/4 brown sugar (loosely measured, not packed)
1/4 cup whole wheat pastry flour
1 tsp. ground cinnamon (adjust to taste)
3-4 Tbl. butter
1/4 tsp. ground ginger
1/8 tsp. ground cloves
1/8 tsp. ground nutmeg
Optional topping: fresh whipped cream
1. Stir filling ingredients together, and fill two small ramekins.
2. In a separate bowl, combine the topping ingredients with your fingers until the butter and flour/oats are evenly combined and make small pea-sized clumps.
3. Add topping onto the filling.
4. Bake in a preheated oven at 375 F for 30-35 min.
5. Serve warm, topped with whipped cream, if desired.
