Strawberry Coconut Cream Popsicles (Dairy-Free Indulgence for Summer Days)

I made this recipe accidentally the other day, when I realized I had blended too many strawberries and didn’t want them to go to waste. It was a hot, hot day so popsicles sounded like the perfect fix, and they were!

Most ice-cream style popsicle recipes are incredibly simple. Blended fruit, mixed with a creamy base (like yogurt, kefir, or in our case, coconut milk), some sweetener and you’re done.

Blend up:

500 ml of strawberries- this measurement is after they are blended up. I would guess that this was about 1 lb of strawberries- just keep adding more to the blender until you hit about the 500 ml mark.

1/3 cup coconut milk (organic/BPA-free can is best)

1/4 cup raw honey (or to taste)

Pour into popsicle mold of choice, wait a few very long and impatient hours, and then indulge!

To us, these tasted almost like strawberry coconut ice cream on a stick. They had a very creamy taste and consistency. Very delicious and perfect for those who are dairy free!

  1. Just made this, froze strawberries that I sliced up and then added some rum to the mix and made an adult drink :) yummy! It is so hard to find mixed drinks that do not have dyes and garbage in them!

  2. Stephanie, I have a son who has an anaphylactic allergy to dairy. It make me sick to eat it, but he will die if he ingests it without the assistance of an Epi Pen Jr. As you can imagine, it has drastically changed our eating habits! In fact, that’s what the Lord used to get me started on the road to healthier living.

    All that to say, I would LOVE an archive from you on dairy-free recipes!!!! Getting a 2.5 year old to eat is a challenge, not to mention with his allergies! (He is also allergic to peanuts and was recently symptomatic to fish.) Please, please help! Thank you!!

    We just got the boxed organic coconut milk in the natural foods section of our grocery store. I’m SO excited since my daughter is very allergic to milk and I’m a bit. I just make a strawberry/blueberry coconut milk smoothie. Gonna try the popsicles next. I think I’m going to need lots of this stuff. (Thinking about trying the keifer recipe you gave too.)

  6. Those look great! Yesterday I had leftover watermelon that I blended up and poured into ice cube trays. We’re having ‘watermelon juice’ today :) I should try to find some popsicle molds!

    • @Jessa, Umm, a garage sale? I’m honestly not sure! :) That’s where a lot of my things like that come from!
      But if you couldn’t find one at a garage sale or thrift store (another good place to look) then check out the kitchen plastic section at Walmart or somewhere like that. Even dollar stores often have them!

      • @Stephanie @ Keeper of the Home, Mine are the same ones (from my childhood LOL!) but I’ve seen them at garage sales. However, in a pinch, you could use a paper cup (yes I know not the best and I don’t normally use them) and a popsicle stick stuck in the middle instead of the red handle.

  9. We use a recipe from the more with less cookbook. Its yogurt, pineapple or orange juice, and vanilla extract.

    Are you still doing dairy free for your family? What do you do for casseroles that call for milk? I can never use those recipes. But I was thinking of experimenting with chicken stock…I don’t know.

    • @Nola, Yep, still dairy free (well, Ryan and I do have dairy sometimes but I have to do dairy free when I’m cooking a meal for everyone). For casseroles, I either skip it (which is sad) or I use coconut milk to make the creamy sauce or the mock canned-soup recipe or whatever it calls for. I do also use extra broth to make up for the liquid, because I don’t want the taste to be too coconutty. I have occasionally used hemp milk as well, but we don’t enjoy that as much. Pot pies are nice because they just use broth and not any dairy products. I also do lots of things that are more tomato based, but skip the cheese.

Myself and my toddler are dairy free (her because I prefer to wait until at least 2 or even 3 due to dairy allergy problems in my family and extended family, me because I have a problem with it for sure). Its not easy at all. I can tolerate some goat products, and do use them occasionally for myself. But its expensive, and I can’t feed that to the family (expensive and my husband won’t eat it).

        I always find it hard to find recipes. It seems a lot of easy recipes need cheese and milk, and “meat and veggies and starch” doesn’t appeal to me at all.
