I've been following her blog, The Nourishing Gourmet, since it's inception over two years ago. Kimi has a very solid grasp on nutrition, but even more than that, she focuses on making foods that appeal to the senses and taste fabulous, all on a frugal budget. Many of the recipes from The Nourishing Gourmet have made their way into our family repertoire and we eat them frequently. They are inexpensive, simple to make and winners at the dinner table.
What the Ecourse Includes:
I have been privy to some course previews and I can tell you that this is a high caliber course and worth much more than she is charging for it! The videos are excellent, showing you recipes step-by-step, while Kimi shares cooking techniques, ideas for ingredient substitutions to use what you have on hand, nutritional tidbits, and plenty of frugal tips.
Each weekly lesson includes a cooking demonstration video, as well as downloadable PDF files with lectures on the why's and how's of preparing real food, help for finding resources for high quality ingredients, shopping guides, health and nutrition information, as well as several recipes for each lesson. The course material is beautifully presented, easy to follow along with and could actually be a book in and of itself!

The Details
Kimi actually teaches cooking classes out of her home in Oregon. These classes run for $35 each and contain similar information and cooking demonstrations.
With the A Peasant's Feast ecourse, each weekly lesson breaks down to just over $9, which is a significant savings! The entire course is only $120 for all 13, compared to $455 if you were taking each course in her home!
Kimi has also generously offered a limited number of partial and full scholarships for those who are financially unable to take the course, but feel that it would really benefit them and their families. You can directly contact her if you feel that you fit into this category.

The lacto-fermented foods section is the part that I’d look forward to and glean the most from, I think.

I’d like to win this for two reasons: 1) because the entire course would benefit my immediate family (history of heart disease and diabetes) and extended family as I can pass along ideas for my step-dad, aunt, and mother-in-law (all Type 2 diabetics) and 2) because I am currently in school to become a personal trainer and specialist in fitness nutrition, and I know the more I learn about not just the “why’s” but the HOW’s of cleaning up a client’s diet, the more helpful I can be to them.

Wow, just found this blog, what GREAT info! On the same journey myself. I would be excited about the whole course, especially soaking grains because I haven’t gotten that down yet, not sure when or how to do that.
I would love to see and read more about the sprouting, sourdough and more in-depth areas of nourishing food on a budget. I have been trying to educate myself and read lots of materials, watch lots of instructional videos and try, try, try recipes. I have three small kids and a husband who isn’t totally sold on nourishing cooking, but our budget demands it. We have histories of diabetes and heart failure in our families and this is a big priority for me. However, with little time nor money, it’s hard. Blessings to you for the chance to win!

I am very interested in the fruit based desserts and lacto fermented vegetables. With summer produce starting to trickle in, I would love healthy ways to use them and save them.
I would love to win this! I looked at each week’s lessons and I loved all of them! I think I’m the most interested in the fruit-based desserts. We aren’t very good at consistently eating our fruits & veggies, so I’d love to learn more ways of incorporating them into our diet!

i am very interested in soaking grains.
I would love to learn about making chicken stock and stretching meat out for multiple meals in particular. But I honestly think I would enjoy every class! Well, I’m not so sure on the lacto-fermenting thing, but maybe she could convince me it’s yummy, lol.
