I just pour out 1 cup or so to make room for freezer expansion and then stick it in the freezer. When we're 2 days away from needing it I take it out of the freezer and put it in the refrigerator. By the time we need it it is defrosted. It will look awful frozen. But once it's defrosted just give it a good shake and it'll be fine! Milk also freezes well as is if you have room in your freezer.
